This search includes determination the activation energy and the rate of sucrose hydrolysis using three organic acids i.e.citric, tartaric and lactic acid. Hydrolysis by hydrochloric acid was used for comparison. This study was carried out at
temperatures of (25,50 and 75)C depending on specific rotation of sucrose by measuring the rotation angle with time every 5
minutes for 60 minutes for every solution prepared from a mixture of equal aqueous solution of sucrose and aqueous solution of the studied acids concentration of 1.5 mol/L.
Results show that the activation energy was:
(21.612,106.068,110 and 349,78.00) KJ/mol for hydrochloric, citric, tartaric, and lactic acid respectively. According to the results of sucrose hydrolysis rate, it was found the possibility of replacing hydrochloric acid with citric or tartaric acid at hydrolyzing temperature of 75C.
