Abstract:

the effect of conservation temperature and pressure applied to the shelf life of chicken meat (thigh - breast) was studied, using a device designed for this purpose. The samples were kept in an experimental storage room at two different temperatures the first +4°C and the second -2°C, after applying the studied pressure 1100 mmHg and 380 mmHg.
